Healthy Soaked Banana Bread

I can’t tell you how excited I was to find a recipe for soaked banana bread!

My children really like to eat bananas for snack time, but sometimes we have a few left over.

Banana bread is great for using up really ripe bananas, so it’s very frugal.

The only problem is that banana bread usually has a lot of sugar and white flour.

It was a happy day when I found this recipe that has no refined sugar, whole grain flour and is also soaked to neutralize the phytic acid in the flour.  Whoo Hoo!

    Thanks for the link. My kid love banana bread. A few weeks ago, I scored a deal on organic bananas, like 21lbs for 3.00! So I’ve got plenty of bananas frozen and in suspension, awaiting their tasty final result. :)

    I’m always looking for soaked breads too. I made this as muffins and in loaf pans. Both turned out well. Just adjust the time the pans are in the oven. :-)

    Could you share your other soaked recipes? That would be so helpful!

    We’ve been grain-free for a while, but we’re slowly starting to reintroduce grains (properly prepared, of course) in small amounts for special occasions.

    This looks yummy.
