How To Make Sauerkraut

I grew up eating sauerkraut from a can. I liked it pretty well, but then I was introduced to REAL sauerkraut! I’m talking about lacto-fermented sauerkraut, alive and health-giving. There’s no way to describe the difference between canned sauerkraut and fresh, real sauerkraut!
(I haven’t taken any pictures of my sauerkraut, so I’ll give you a few links that explain the process.)
(It’s important to remember that these new ways of eating and cooking get so much easier with time. So, if things feel awkward at first, don’t be concerned. )

This has been on my to do list for a long time! We tried to grow cabbage but our crop failed, but our local farmers market has them for .25/head! Thank you for sharing these links. I plan on trying them out next week! I’ll let you know how it goes

I am so hungry for fresh sauerkraut but it’s been raining here so much, the cabbages are dying. I’m about to ::gasp:: buy a head of cabbage from the store!

Great post. I have really come to love fermented cabbage in all flavors.
I’ve also been drooling over your herb prints. They’re beautiful!

I’ve never made it, but I love it! However, I had it from a can as a child and HATED it. My parents always made me gag when they’d eat it. But when I moved to Iowa I went to this little German town that had honest-to-goodness fresh homemade sauerkraut. I’ve been the biggest fan ever since.
